Qdoba runs on the same build-your-own idea as the rest of fast-casual Mexican, with one detail clients love: several of the rich add-ons, the queso, the guacamole, the salsas, are included rather than upcharged. That is great for flavor, but it also means it is easy to say yes to everything, so knowing what each scoop contributes really helps.
